Bryan Graham is the founder of Fruition Chocolate Works.
From a very young age, Bryan was passionate about chocolate, pastry and food of all types. Bryan attributes his interest in the field of baking and pastry to his grandmother. During visits to her farm in upstate New York, Bryan learned how to pick perfectly ripe ingredients and transform them into pies, cakes, jams and jellies.
His interest led to a pastry chef position at a local restaurant and then formal training at the Culinary Institute of America. There an interest in the history and science of chocolate and confectionery was sparked. Since, Bryan has educated himself on the techniques and craft of chocolate.
Located in the Catskills in New York, Fruition select ethically-sourced and flavourful cocoa beans for their award-winning line of craft chocolate.
