Description

Located to the east of Papua New Guinea, the Kingdom of the Solomon Islands is made up of a thousand islands and islets representing an emerged territory barely larger than Switzerland.

In recent years, small family cocoa farms have gradually replaced large palm oil plantations. Although Solomon Islands cocoa is still little known, it stands out as a rare and subtle varietal complex.

David Junior Kebu’s cocoa plantation is located in the northeast of Guadalcanal Island, near the town of Honiara. Camped on the banks of the Matepono River, the family farm stands out for the quality of the care taken in fermentation, drying, and the selection of beans. This work earned him, in 2015, a gold medal at the International Cocoa Awards.

    Intense, deep, and with a strong liquorice note.

    Aroma: chocolate, citrus, woody
    Melt: slow, smooth
    Flavour: initial woody, metallic, tobacco notes- sometimes I felt as if I had licked a penny. As the melt progresses, you are hit with sour citrus which is linear viz. does not appear in bursts. Towards the end, the citrus notes end abruptly and the beginning flavours enter the foreground again.

    I found that tasting this chocolate with a mug of warm water really highlighted the citrus notes. I would not have guessed that it was a 90%- it had no bitterness or astringency.

    An enjoyable and unusual bar.
