Ruby Hue is a bean-to-bar chocolate maker based in Bristol, founded by pastry chef Ru and mixologist Tom. The pair originally started Ruby Hue as a pop-up, but the challenges facing the hospitality industry during the Covid-19 pandemic led them to rethink the business. After discovering the world of craft chocolate, they began learning about bean-to-bar production and eventually started making their own chocolate.
Ru brings a background in Michelin-starred kitchens, including a role as Head Chef in the Royal Box at the Wimbledon Lawn Tennis Association, as well as a place in the semi-finals of Channel 4’s Bake Off: The Professionals. Tom’s career as a mixologist has taken him around the world and developed his interest in flavour and terroir.
Today, Ruby Hue describes itself as Bristol’s first fully bean-to-bar chocolate maker. The company works with fine cacao from a range of origins, including Peru, Uganda, Guatemala and Thailand, with an emphasis on ethically and sustainably sourced cacao.
