“At the foot of Pic Saint-Loup, between vineyards and scrubland, Les Co’Pains du Pic are one of the rare artisans to make sourdough bread from ancient cereals, without added yeast. Listening to our childhood memories, we combined our grand cru dark chocolate from Belize with “Méteil” country bread which reveals its rustic aromas of Sous bois, while providing the characteristic comfort of good crusty bread.”
We had to look this up – Sous bois is a French term meaning undergrowth or forest floor. It’s used to indicate more than just dead leaves, with a mushroom, white truffle, hint of crushed pine needles or other vegetative quality to it.
