A first for Chocolarder, these are the first beans from Thailand the company has worked with—an origin relatively new to the European market that is quickly gaining awards and international recognition.

These beans represent the beginnings of Thai cocoa. Over 30 years ago, Prof. Sanh La-ongsri, Ph.D., combined Criollo and Amelonado cocoa varieties. This marks the first time the beans have left the country after years of producers struggling to keep up with local demand. The result is an incredibly creamy and highly sought-after cocoa.

Many may find it hard to believe this is 80% cocoa.

Chocolarder was started by pastry chef Mike Longman in 2012. Longing for fresh ingredients to use in the kitchen, his obsession with making bean to bar chocolate began. It didn’t take long before Mike was making chocolate full time. Now the chocolate, made in Falmouth in Cornwall, is sold all over the world and used by Michelin star chefs.
