Lady Merveilles Old-Fashioned Dark Praline Chocolate 75% Sao Tomé

Founded in 2015 by Marine Schmitt, Lady Merveilles is a small bean-to-bar chocolate maker based in Saint-Avé, in Brittany, France. With a background in high-end pastry and chocolate making, including experience in France, England and Australia, Marine set out to create chocolate from the cocoa bean rather than using ready-made chocolate. After building relationships with cocoa producers in Ecuador and sourcing specialist equipment, Lady Merveilles moved to a fully bean-to-bar approach across its range in 2021. Marine works closely with organic producers who use agroforestry and environmentally conscious farming methods. The maker also uses locally sourced ingredients where possible, including Breton strawberries and sea salt, and finds ways to reuse cocoa by-products. Combining careful sourcing, traditional craftsmanship and a focus on the character of individual cocoa origins, Lady Merveilles produces a varied range of organic bean-to-bar chocolates, including some distinctive high-cocoa milk chocolates and creative flavour combinations.
