The baru nut grows wild on trees in the Cerrado Biome of Brazil and is collected by families and processed by community co-ops. Baru is the size of a large almond but tastes closely to a peanut. Mission Chocolate grind the baru nuts together with the cocoa beans to make a creamy chocolate with the nuttiness of baru. Then sealed with a bit of sea salt.

Mission Chocolate bean to bar chocolate maker, based in São Paulo, Brazil use ingredients that are native to the Americas. The founder Arcelia Gallardo previously trained as a chocolatier, working in Los Angeles and Berkeley, California, and now finds herself working as a chocolate maker in Brazil.  Their chocolates are the most awarded in Brazil, with 50 national and international prizes in the last 5 years. They use ingredients that are: native to the Americas, grow wild, are endangered, promote environmental preservation, encourage community development and taste great. Their farmers receive almost 4 times more than the market price, buying directly from the producer, with no middle person involved. They visit and speak with the farmers often, including their organic sugar producer – working to create the best product.
