Description
This dark Red Pod Single Origin chocolate from Paradai with cocoa from the Nakhon Si Thammarat region in Thailand has a cocoa content of 70%. The special feature lies in the careful selection and pre-selection of the cocoa pods before they are further processed. The cocoa comes exclusively from red cocoa pods, which make up about 10% of the harvest. These cocoa beans behave differently: they ferment faster at a higher fermentation temperature. Their aroma is different and these beans definitely taste different.
The result is a chocolate with unique flavors that stand out from other varieties, with a special chocolatey flavor profile that is reminiscent of citrus, sour cherry, lychee, guanabana, rum and honey, among others.
This bar was awarded gold at the International Chocolate Awards World Final 2023 and was the overall winner of gold at the International Awards Asia Pacific 2024.
