“Our Grand Cru Mexico El Vado 85% chocolate bar is a dark chocolate with a rich, slightly spicy flavor that takes a little while to develop before enveloping you completely. The beans come from the remote village of El Vado, perched in a mountainous area of the Sierra Madre, in the state of Chiapas.
This ‘mountain cacao’ is cultivated by fourteen farming families at an altitude of 350 meters, in the shadow of the majestic Sierra Madre. Our partner, José Maria ‘Chema’ Pascacio, buys it from the producers and then transports it to his own post-harvest centre for fermentation and drying. He places particular importance on these two crucial steps, which play a decisive role in the final taste of the chocolate.”
