Description
A 75% dark chocolate bar made with organic cacao from Maya Mountain Cacao in southern Belize. The cacao is sourced from more than 400 smallholder farming families, primarily from the Q’eqchi’ and Mopan Maya communities.
Maya Mountain Cacao uses a centralised fermentation and solar-drying process to develop a consistent, aromatic cacao with notes of honey, pineapple and grape, complemented by a balanced chocolatey character.
The cacao is grown using organic agroforestry methods, with a variety of fruit and shade trees helping to support local biodiversity.
Awarded Silver at the 2023 Academy of Chocolate Awards.
Brand
Lady Merveilles
Founded in 2015 by Marine Schmitt, Lady Merveilles is a small bean-to-bar chocolate maker based in Saint-Avé, in Brittany, France. With a background in high-end pastry and chocolate making, including experience in France, England and Australia, Marine set out to create chocolate from the cocoa bean rather than using ready-made chocolate.
After building relationships with cocoa producers in Ecuador and sourcing specialist equipment, Lady Merveilles moved to a fully bean-to-bar approach across its range in 2021. Marine works closely with organic producers who use agroforestry and environmentally conscious farming methods.
The maker also uses locally sourced ingredients where possible, including Breton strawberries and sea salt, and finds ways to reuse cocoa by-products.
Combining careful sourcing, traditional craftsmanship and a focus on the character of individual cocoa origins, Lady Merveilles produces a varied range of organic bean-to-bar chocolates, including some distinctive high-cocoa milk chocolates and creative flavour combinations.
