A generous dark chocolate bar filled with handcrafted almond and hazelnut praline, made in the maker’s workshop. Organic almonds and hazelnuts, sourced directly from producers in Lot-et-Garonne, are roasted and caramelised before being lightly ground between granite rollers. This creates a rich, smooth praline with little pieces of hazelnut that add a satisfying crunch.
The bitterness of dark chocolate balances the sweetness of the caramelised nuts, combining a smooth, melt-in-the-mouth texture with a little crunch.
Founded in 2015 by Marine Schmitt, Lady Merveilles is a small bean-to-bar chocolate maker based in Saint-Avé, in Brittany, France. With a background in high-end pastry and chocolate making, including experience in France, England and Australia, Marine set out to create chocolate from the cocoa bean rather than using ready-made chocolate.
After building relationships with cocoa producers in Ecuador and sourcing specialist equipment, Lady Merveilles moved to a fully bean-to-bar approach across its range in 2021. Marine works closely with organic producers who use agroforestry and environmentally conscious farming methods.
The maker also uses locally sourced ingredients where possible, including Breton strawberries and sea salt, and finds ways to reuse cocoa by-products.
Combining careful sourcing, traditional craftsmanship and a focus on the character of individual cocoa origins, Lady Merveilles produces a varied range of organic bean-to-bar chocolates, including some distinctive high-cocoa milk chocolates and creative flavour combinations.
Bean-to-bar chocolate is made by the chocolate maker starting with cocoa beans and controlling the process from roasting and grinding through to the finished chocolate.
