Freddy Salazarโ€™s estate in the Cloud Forest of Costa Esmeraldas is situated on an ex-cattle ranch.ย  Very steep, lush, layered slopes complicate the daily work but the year round climate stays quite stable with a short wet season and misty, drizzly summers in the aptly named Cloud Forests.ย  Minimal temperature fluctuation means consistency is more achievable.ย  Management of the cocoa orchards creates over 40 full-time jobs in the local community of rural Esmeraldas.

This bar contains nuts – Tuono Almonds. 49% is at the top end of the milk category and while this bar brings the chocolate it’s mellow, the raspberry is mellow, the anise adds a light dimension.
