Description
A rare 70% dark chocolate made with an exceptionally small harvest of ancient Criollo cacao from northern Nicaragua. The cacao was discovered near Susucayán, high in the mountains of northern Nicaragua close to the Honduran border, by cacao conservationist Giff Laube, who has spent years searching for surviving Criollo trees in Nicaragua and Central America.
After taking cuttings from the original wild trees, Giff spent ten years nurturing and grafting them at his farm before producing enough cacao for this very limited microlot. SOMA were the lucky recipients of this rare lot of cacao.
The resulting chocolate has a delicate and distinctive flavour profile, with notes of caramel, sweet almond, malt, apple blossom and honey.
