Nicola has paired exceptional Colombian cacao with her in-house masala chai blend and a touch of milk, creating a beautifully balanced spiced dark-milk chocolate. The blend of organic Assam tea leaves and warming aromatic spices gives the bar a rich, layered character that feels both comforting and complex.
Nicola explains the cacao’s origin: “In the Consejo Las Varas area, small producers come to sell their cacao and the price paid depends on quality. The Afromuvaras women’s association pays more for well-sorted cacao.
We work with this cacao from the Tumaco region, which has bright fruit notes and gentle acidity, with hints of red berries, citrus, and soft caramel. The diversity of landscapes and growing conditions across Colombia gives each origin its own character, which we aim to preserve in the chocolate we make.”

Nicola Knight's cocoa journey began with a tourist visit to a plantation in the Caribbean in 2011, and an idea that just wouldn’t go away. There must be more to chocolate? Since then Nicola's chocolate journey has taken her to becoming a certified chocolate taster, chocolate educator, and now a self-taught chocolate maker.
Made in micro-batches in a tiny home chocolate factory in Exeter, with a dedication to hands-on small batch making. Each bean has a unique flavour profile, which is allowed to shine in every single batch.
